In their own words
Flyspray
Flyspray is a free, self-hosted web bug tracker written in PHP for software development and project management. It runs on Linux and web servers and is released under the LGPL 2.1 licence. Multiple projects, task histories, comments, file attachments, voting, dependency graphs, roadmaps and task search support day-to-day issue work. Users can watch tasks and receive changes by email, XMPP or on the page. Global and project-specific roles and permissions provide customizable access control. Atom and RSS feeds, task filters and CSV export extend task handling. Optional OAuth2 single sign-on can use providers such as Facebook and Google. Flyspray 1.0 or later requires web-server software, PHP 5.6 through PHP 8.3, PHP-GD and a database such as MySQL or PostgreSQL; MariaDB is listed as a compatible variation, and Apache is officially supported. The latest listed release is 1.0-rc11, dated 29 January 2024. Development downloads may contain bugs and unintended side effects and are not recommended for production.
Redmine
Redmine is an open-source web application for managing projects, available for self-hosting. A single instance can manage multiple projects, each with its own roles, visibility settings, and enabled modules. Teams can define issue statuses and types, then set workflow transitions by issue type and role. Gantt charts and calendars use issue dates for planning, and time entries can be reported by user, issue type, category, or activity. Collaboration tools include project wikis and forums, news, document and file management, feeds, and email notifications. The repository browser supports Subversion, CVS, Mercurial, Bazaar, and Git. Its REST API provides basic create, update, and delete operations for documented resources in XML and JSON. Redmine is released under GNU GPL v2 and costs nothing for self-hosting. It should run on most Unix, Linux, macOS, and Windows systems where Ruby is available, but it does not support JRuby. The project directs users to forums and IRC for help and discussion. The download page identifies the 7.0.x branch as the latest stable version, with new features, bug fixes, and security updates.
