In their own words

GitBook

GitBook is a documentation platform for teams creating, reviewing, and publishing branded documentation websites. Content can be written in a block-based visual editor or Markdown, organized through branch-based review, or synchronized with GitHub and GitLab. Published sites support custom domains, responsive layouts, SEO, preview deployments, and site variants. GitBook Agent can surface documentation gaps, draft updates, and review changes, while GitBook Assistant answers questions using documentation and connected sources. Teams can set tiered permissions and restrict documentation to authenticated users. The Free plan is free, includes one user, and limits GitBook Agent to 10 messages per week. Premium is $65 a month billed per site annually, plus $12 per user/month; Ultimate is $249 a month billed per site annually, plus $12 per user/month. Annual billing includes two months free, and a 14-day trial is available. Published documentation traffic is not limited.

XWiki

XWiki is an open-source enterprise wiki and knowledge-management platform for collaboration, document management and structured data. It can be used for knowledge bases, collaborative intranets, public websites and business applications, with publishing for internal or external audiences. Editors can work in wiki syntax or a WYSIWYG interface, while version control allows earlier pages to be compared or restored. Page rights can govern viewing, editing and deletion at the page, child-page or whole-wiki level. More than 900 extensions include applications, macros, skins, plugins and themes. Listed connectors include Active Directory, Office 365, Google Apps and OnlyOffice; a RESTful API supports integration with other applications. XWiki is available as a self-hosted installation or through XWiki Cloud. Its Community edition is self-hosted and open source; cloud plans list capacities from 25 users to unlimited users. XWiki Cloud's 10-day demo trial can be extended twice. Cloud service is hosted in France on OVHcloud and includes backups, monitoring, antivirus scanning and security maintenance. If storage exceeds a plan allowance, wiki actions may be limited to viewing pages.
